Mogens Bay Esbensen (born 1930) is a prominent Danish-born chef and author who is widely credited with introducing Thai cuisine and ingredients to Australia,[1] and is considered a pioneer of Modern Australian cuisine.[2] He operated La Causerie, Pavilion on the Park, Butler's[3] and The Old Bank [4] restaurants in Sydney and Nautilus in Cairns.[5] He now lives on the island of Læsø halfway between Sweden and Denmark.[1]
